Components
Before assembly, you will need to prepare the following three elements. Each component should be made in advance.
- Coconut Crumble – An ultra-crunchy, snow-like bed of toasted coconut and butter.
- Spicy Honey Variegato – A glossy, professional-grade honey ribbon with a slow-build chili heat.
- Roasted Mango & Lime Ice Cream – A smooth, high-fruit gelato base with a vibrant, tart edge.
Plating Instructions
1. Create the Base.
Take a chilled serving plate. In the center, scatter a generous tablespoon of the Frozen Grated Coconut Crumble. Spread it slightly to create a textured bed.
2. The Perfect Quenelle.
Using a spoon dipped in hot water (and dried quickly), form a smooth, tight quenelle (an oval scoop) of the roasted mango and lime ice cream. Gently place the quenelle directly on top of the crumble bed.
3. The Spicy Drizzle.
Using a squeeze bottle or a piping bag, artfully drizzle the spicy honey over the ice cream. Allow the syrup to run down the sides and pool slightly in the crumble base, making sure the red chili flakes are visible.
4. Final Garnish (Optional).
For an extra touch, sprinkle a pinch of freshly grated lime zest or a few coconut flakes just before serving.
